One thing that I have found that has helped me during the grieving process (and even during the pandemic) was distracting myself with baking...there is something therapeutic with losing oneself in a recipe for hours on end. I keep some of the baked goods but give the rest away to friends and neighbors.
What are some of your favorite things to bake? Bread? Cakes, pies, cookies? Feel free to share your baking recipes here.

Best Fudgy Brownies
Everyone who has ever eaten these asks for this recipe! So, here you go...better than any boxed mix...
If you want to make it 'healthier', you can substitute egg whites for whole eggs, and margarine for the butter...they are still delicious!
1 cup butter (I prefer Finlandia or Kerrygold) - OR margarine 4 squares unsweetened chocolate (I prefer Guittard)
2 cups granulated sugar
4 eggs 1 cup unbleached all-purpose flour 1 teaspoon pure vanilla extract (I prefer Nielsen-Massey) 1/2 teaspoon sea salt 2 cups coarsely chopped nuts, optional (walnuts or pecans, toasted)
1. Preheat oven to 350 degrees. Grease 13x9 baking pan. In 3-qt saucepan over very low heat, melt butter (or margarine) and chocolate, stirring constantly.
2. Remove pan from heat and with a spoon, stir the sugar into the chocolate. Allow the mixture to cool slightly.
3. Add eggs (or egg substitute) one at a time, beating until well blended after each addition of each egg.
4. Add the flour, vanilla, and salt to the mixture and stir in well.
5. Add the chopped nuts to the mixture and stir to blend well.
6. Pour batter into greased baking pan, and bake for 30-35 minutes.
7. Brownies are done when toothpick inserted in center comes out clean. Cool in pan on wire rack; with a sharp knife, cut brownies into pieces.
Makes 24 brownies, 274 calories each.
